Writing and poetry do depend on language, at times one more than one, but some people write solely for themselves, e. g. diaries. This would not make it a service, especially if only one language is used.
In the broadest sense even filling in a form could be considered a language service... which, of course, doesn't really make sense.

Filling a form is a legal/administrative service.
I would put writing/poetry under language service umbrella, not sure what else.

Only if it is offered as such ("I write you a poem for your best friend's anniversary").
Otherwise I would rather classify it as art. (fluid boundaries here)

Maybe creative industry. If it’s a marketing writer than it’s a business service, not creative one.

Marketing copywriting is actually a service, writing literature is not.
BTW, marketing requires a lot of creativity (not to be confused with art).

You can write literature as a service, as a ghostwriter. Not sure why you would say writing literature is not a service.
Everything in the world involves an element of creativity.

Because a service is normally something you provide to someone else at their request.
